Pollo Tropical is a Latin-inspired, citrus-marinated chicken concept with over 115 locations across the southeast. The brand has an especially high concentration of sites in the Miami, Tampa, Jacksonville, and Orlando markets.

Beginning with a concept design that the client developed internally, Pinbar team members helped create full A&E prototype documentation for the brand’s free-standing drive-thru format. This standard was then applied to remodels across their fleet - which produced an average 20% sales growth rate over the previous brand experience.
